新潟県村上市、町屋の一角にある小さなロースタリーです。

自家焙煎コーヒー豆の販売、及び、テイクアウト用コーヒーはご注文ごとにハンドドリップで抽出しています。

（現在、店内での飲食は行っておりません。）

焙煎は小型のロースター「FUJI ROYAL  R-101」を主に使用し、加熱方法は、直火の香ばしさと煎りムラができにくい熱風による焙煎を組み合わせた「半熱風式」を採用しています。

コーヒー豆はシングルオリジンのみを取り扱っており、その個性に応じて焙煎度を変えています。主にコーヒー初心者の方を意識して取り扱うコーヒー豆は常時5〜６種類に絞り、産地や農園、品種、生産処理方法などによって異なるコーヒーの個性やストーリーをお伝えしています。シングルオリジンコーヒーが持つ個性や魅力をどのように最大限引き出してお客さまに繋ぐことができるか、日々模索しています。

NIJIYAの由来はレインボーの「虹」です。

カラフルな色に象徴される「多様性」と「一体感」をイメージしています。

「自分」といういちばんの謎と向き合って、悩みながらその個性を大切に生きる人、人種も宗教も年齢も性別も超えていろんな愛の形を探りながら「自分らしさ」を追求する人を心から尊敬し、応援するという価値観を表現しています。

Hello, this is NIJIYA coffee!

We are a small roastery located in a corner of Machiya, Murakami City, Niigata Prefecture.

We sell self-roasted coffee beans and hand-drip coffee for take-out.

(Currently, we do not serve food or beverages inside the store.)

We mainly use a small roaster "Fuji Royal R-101" for roasting, and adopt the "semi-hot air method" of heating, which combines the aroma of direct roasting with hot air roasting to prevent uneven roasting.

We handle only single-origin coffee beans and vary the degree of roasting according to their individual characteristics. We always limit the coffee beans we handle to five to six varieties, mainly with the novice coffee drinker in mind, to convey the individuality and story of coffees that differ by origin, plantation, variety, and production processing method. We are constantly searching for ways to maximize the individuality and appeal of single-origin coffees and connect them to our customers.

The origin of NIJIYA is the "rainbow" of NIJI.

We imagine "diversity" and "Oneness" symbolized by the colorful colors.

NIJIYA expresses our values of respecting and supporting those who face the greatest mystery of all, "self," and live their lives with a sense of individuality while being troubled, and those who pursue their "self" while exploring various forms of love beyond race, religion, age, and gender.

当店のシングルオリジン

シングルオリジンコーヒーとは、一定のエリアで採れた単一品種のコーヒーを指します。一つの農園で、また生豆を精製する方法も同じである場合が多いですが、エリアの範囲に明確な定義付けはありません。

当店では、主に農園または周囲の特定の信頼できるエリアに絞って、誰がどこで栽培したのか、品種や精製方法、栽培地の標高など確実にわかるコーヒーだけを取り扱っています。

仕入れ先は、生産者や農園と連携しながら産地の状況確認ができ、信頼関係を築きながらこだわりの品質を追求する卸業者に限定しています。

また、Qグレーダーにより定期的に品質チェックされ、定温倉庫にて適切に保管された生豆をすべて当店で焙煎し鮮度の良い状態でお客さまにご提供します。

トレーサビリティに優れ、ロットごとに客観評価されたオークション入賞商品にひけをとらない高品質のコーヒー豆だけを厳選し、生産地域のストーリーと共に、個性的でカラフルなコーヒーの魅力をお伝えします。

Our Single Origin

Single origin coffees are single varietal coffees from a certain area. There is no clear definition of the area, although it is often the same plantation and the same method of refining the green beans.

We focus primarily on a farm or a specific, trusted area surrounding it, and we only deal in coffees for which we know with certainty who grew them, where they were grown, the variety, the method of refining, and the altitude of the growing area.

We limit our suppliers to wholesalers who are able to confirm the status of the production area while working with the growers and farms, and who pursue the highest quality while building a relationship of trust.

We also provide our customers with freshly roasted green coffee beans that have been regularly quality-checked by a Q grader and properly stored in our temperature-controlled warehouse.

We carefully select only high quality coffee beans that have excellent traceability and are as good as auction-winning beans that are objectively evaluated lot by lot, and we convey the appeal of unique and colorful coffee along with the stories of the producing regions.

多様な愉しみ方でいいと思う

サードウェーブ以降、質と味の良さで定義されるスペシャルティコーヒーや追跡可能性が確実なシングルオリジンの認知度は確実に上がり、選択肢も増え、複雑で繊細な風味を愉しむ機会が本当に増えました。コーヒーに関するブログや動画は国内・国外問わず日々更新されていて、どこにいても好きなだけ情報を得ることができる時代。

それでも、実際にコーヒー店としてお客さまと接してみると、コーヒーは「苦くて濃ければ良い」という方もまだまだ多い、というのが実感としてあります。

もちろん、それが悪いというわけでは決してありません。

私自身、講師としてコーヒーの淹れ方の講座に招かれた時に、参加者の方から普段のコーヒーの飲み方を伺うと、「缶コーヒーが一番好き」とか「自分は飲まないけど、香りが好きだから家族のために毎日淹れる」という方もいて、本当にその愉しみ方は多様であることに驚かされました。

共通の飲み物なのに、こんなに違う愉しみ方ができることがまずおもしろいと思いますし、「コーヒー」そのものが年代、性別、国籍などを超えて愛され変化しながら人々の生活に寄り添ってきた事実をとても興味深いと感じます。抽出器具や技術もまだまだ進化していて、今後ますますコーヒーの愉しみ方は多様になっていくのだろうなという可能性も感じます。

Diverse ways to enjoy coffee

Since the Third Wave, awareness of specialty coffees defined by quality and taste, and single origin coffees with a definite traceability, has steadily increased, and the number of options has grown, providing more opportunities to truly enjoy complex and delicate flavors. Blogs and videos about coffee are updated daily, both domestically and internationally, and we can get as much information as we want wherever we are.

However, when I actually interact with customers as a coffee shop owner, I realize that there are still many people who think that coffee is good as long as it is bitter and strong.

Of course, this is not necessarily a bad thing.

When I was invited to a lecture on how to brew coffee as an instructor, I asked the participants about their usual coffee drinking style.

I think it is interesting that such different ways of enjoying a common beverage are possible, and I find it very interesting that "coffee" itself is loved by people of all ages, genders, and nationalities, and that it has been a part of people's lives while changing. 消費に責任を持つ

もうすでに、社会全体で自然環境や「今後の世界」を考えながら行動につなげることが不可欠な時代ですが、個人のレベルでできることのひとつに「じぶんの消費に責任をもつ」ことがあると考えています。

なるべく使い捨てずに次に繋げる、ごみをなるべく出さないという意識…

「つなげる」を意識した消費行動をとるという、一人ひとりのポジティブな変革の積み重ねが世界を確実に変えていくのだと思います。

NIJIYA coffeeで「シングルオリジンコーヒー」を取り扱うことの意義の一つに、私自身そこでSDGsに関する多くのヒントを得たことが挙げられます。

追跡可能性は持続可能性と密接に結びつくのだと知り、コーヒー販売を通して自分達にできること、ここでしかできないことをもっと掘り下げたいと考えています。

世界中でこれからもっともっと起きるであろうポジティブな変革に、NIJIYA coffeeが少しでも寄与できたら幸いです。

Responsible consumption

In an age when it is already essential for society as a whole to think about the natural environment and the future of the world, one of the things we can do on an individual level is to take responsibility for our own consumption.

I believe that the accumulation of positive changes in each individual's consumption behavior with an awareness of "connecting" will surely change the world.

One of the reasons why NIJIYA coffee is offering "single-origin coffee" is that I myself have gained many hints about the SDGs from the experience.

I have learned that traceability is closely linked to sustainability, and I would like to explore more what we can do and what we can only do here through coffee sales.

We hope that NIJIYA coffee can contribute to the positive change that will happen more and more around the world in the future.
